Homemade HobNobs


Don't we all love easter with its abundance of new life, bright bursts of vibrant colours and, let's be honest... chocolate!! I think it's fair to say, even us adults get excited about the idea of a bit of chocolate at easter. But sometimes, it might just turn out that we end up with way too much of the stuff and we just feel there's only so much we can sit and eat.

Well, I thought of the perfect solution! Why not turn some of it into chocolate hobnobs, just like the ones you get from the packet, but even more yummy! These biscuits are so easy to make, I was inspired by Steve's Kitchen hobnob recipe. These biscuits are so easy to make and only take about 30 minutes in total from start to finish. Give them a go!

Here's how to make these yummy oaty goodies!

Homemade Chocolate Hobnobs

Preheat oven to 180C / 350F

*180g / 6oz of Castor Sugar

*240g / 8oz Butter

*3 tablespoons of Golden Syrup

*300g/ 10oz of Rolled Oats

*180g/ 6oz of Wholemeal Flour

*2 teaspoon of Bicarbonate of Soda

*1 teaspoon of Salt

*200g/ 7oz of Milk Chocolate

Instructions

1. Put the sugar and butter in a large mixing bowl and cream together.

2. Place the golden syrup in the bowl and mix into the creamed butter and sugar.

3. Add the oats, wholemeal flour, Bicarbonate of Soda and salt to your bowl and mix together.

The dough will feel quite dry and stiff, that's how it's meant to be. You will most likely have to use your hands near the end of mixing to incorporate all ingredients which will create a soft dough.

4. Either roll the dough out and press out circles with a cookie cutter so they end up about half a cm thick or take a small ball and push it into a round cutter so you get a nice smooth circle.

5. Place in the middle of your preheated oven and cook for 10 mins, don't allow the biscuits to go brown or too golden, you want them just cooked so crispy but not over done.

6. Once cooled completely, you can melt your chocolate, I like to use a Bain Marie (place saucepan of boiling water on the stove and put a large glass bowl directly into the pan so it sits just above the water. Break chocolate and place in glass bowl).

Spread the melted chocolate on the rough side of the hobnobs.

7. Leave to set!
